🏞️ Worthy Eateries
This week I wanted to share my recent experience at Astrance (prev. 3 stars in the Michelin guide).
You might not know this, but as a Michelin-starred restaurant, you lose all awarded stars if you change your restaurant venue.
Stars are awarded for a dining experience in its holistic sense, not only for the chef or the team.
Anyway, so here I am at Astrance eating at chef Pascal Barbot’s amazing table, not knowing that my friends Florence and Thomas in the kitchen had planned for my visit.
Pascal Barbot is a genius (that’s what my friends say) and is recognised as a key figure in French modern cuisine. He’s particularly known for having trained a new generation of female chefs ( Adeline Grattard, Tatiana Levha, Agata Felluga and Manon Fleury).
I knew what I was getting to here, given I had experienced the team’s work previously when they were at Cena while waiting for the works to be completed at the former Joël Robuchon’s Jamin.
On top of an exquisite lunch, I also got to meet someone who’s been a huge inspiration to me and who inspired me to go to culinary school and think about becoming a chef. Bjorn Frantzen (see middle picture with Florence, my best pal from culinary school) is a world-class chef and restaurateur, known for his 3-star Stockholm restaurant bearing his last name and currently sitting at the 6th position on the World’s 50 Best ranking.
